Arugula & Strawberry Crunch Salad with Strawberry Balsamic Vinaigrette

RECIPE DESCRIPTION:

An Arugula and Strawberry Crunch Salad with Strawberry Balsamic Vinaigrette is the best way to wrap up May with flavor! Use Buddy Fruits Organic Strawberry Spread in your vinaigrette to add fruity depth without the need for added cane sugar.

INGREDIENTS:

  • 4 cups arugula
  • 1 cup strawberries, chopped
  • 1/2 cup candied pecans
  • 1 ripe avocado, sliced
  • 1/4 cup dates, pits removed and chopped
  • 2 oz goat cheese crumbles

Blackened Salmon Bites:

  • 12 oz salmon, cut into cubes
  • 2 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp oregano
  • 1/8 tsp cayenne
  • 2 tsp olive oil
  • Lemon wedge to finish

For the Strawberry Balsamic Vinaigrette

  • 1/4 cup Buddy Fruits Organic Strawberry Fruit Spread 
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey  
  • 1 tbsp stone ground mustard - or dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

DIRECTIONS:

  1. For the salmon bites:  toss the salmon, seasonings and oil to coat. Air fry at 400 for 5-7 minutes. For a regular oven, bake at 425 for 8-10 minutes. Finish with a squeeze of lemon.
  2. For the strawberry balsamic vinaigrette: Mix together Buddy Fruits Organic Strawberry Fruit Spread, olive oil, balsamic vinegar, honey, mustard, salt and pepper.
  3. Toss all ingredients with about 1/2 the dressing until evenly coated. Serve with the salmon bites and additional dressing if desired.
