Roasted Strawberry Tart
RECIPE DESCRIPTION:

INGREDIENTS:
For the filling
- 1 pint strawberries (roasted or raw)
- 4 tbsp Buddy Fruits Organic Strawberry Fruit Spread
- 4 oz cream cheese, softened
- 2 tbsp sugar
- 2 tbsp lemon juice
- 1 egg yolk (save egg white for pastry!)
- 1 lemon, zested
- 1 tsp vanilla
- 1 tsp salt
For the pastry:
- 1 package of puff pastry dough unthawed
- Egg white (to brush the pastry dough with)
DIRECTIONS:
- If you are roasting your strawberries, preheat the oven to 425 degrees and then roast the strawberries for 30 min.
- In a medium bowl smash roasted strawberries and combine with cream cheese, egg yolk, lemon juice, lemon zest, salt and vanilla.
- On a lightly floured surface, roll puff pastry into a 13-by-11-inch rectangle about ⅛-inch thick. Transfer the dough to a parchment-lined baking pan. With a sharp knife, score a 1-inch border along the edges of the puff pastry (don’t cut all the way through).
- Spread the cream cheese mixture evenly inside the scored border.
- Then evenly distribute 6 tablespoons of Buddy Fruits Organic Strawberry Fruit Spread on top of the cream cheese filling and arrange the strawberries on top in a single layer.
- Bake until the pastry is puffed and golden, 22 to 30 minutes. Transfer pan to a wire rack to cool for at least 20 minutes or up to 8 hours before serving.
- Slice and serve!
