Chamomile Tea Cake with Strawberry Buttercream

RECIPE DESCRIPTION:

INGREDIENTS:

For the Chamomile Tea Cake:

  • 2 tbsp chamomile tea (preferably loose-leaf or in tea bags)
  • ⅓ cup boiling water (for tea leaves)
  • ¼ cup Belvoir Elderflower Syrup
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ½ cup vegan butter 
  • ¼ cup cane sugar (or alternatively ¼ cup monk fruit)
  • 2 large flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water)
  • 1 tsp vanilla extract
  • ½ cup non-dairy milk (such as almond, soy, pea or oat milk)

For the Strawberry Buttercream:

  • ½ cup vegan butter (softened)
  • 2 cups powdered sugar (sifted)
  • 3 tbsp Buddy Fruits Organic Strawberry Fruit Spread
  • 1 tsp vanilla extract
  • Pinch of salt (optional)

DIRECTIONS:

Make the Cake:

  1. Preheat the oven to 355°F (180°C). Grease and line an 8-inch loaf cake pan.
  2. Steep chamomile tea in ⅓ cup boiling water for 5 minutes, then strain and let cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, sugar and salt.
  4. In a large bowl, beat vegan butter until fluffy. Mix in flax eggs and vanilla.
  5. Gradually add dry ingredients, alternating with chamomile tea and non-dairy milk. Mix until just combined.
  6. Pour batter into the pan and smooth the top. Bake for 40-45 minutes or until a toothpick comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Make the Buttercream:

  1. Beat vegan butter until smooth. Gradually add powdered sugar, mixing until fluffy.
  2. Add Buddy Fruits Organic Strawberry Fruit Spread, vanilla, and salt. Mix until smooth. Adjust consistency with non-dairy milk if needed.

Assemble:

  • Spread buttercream over the cooled cake.
