Chamomile Tea Cake with Strawberry Buttercream
RECIPE DESCRIPTION:

INGREDIENTS:
For the Chamomile Tea Cake:
- 2 tbsp chamomile tea (preferably loose-leaf or in tea bags)
- ⅓ cup boiling water (for tea leaves)
- ¼ cup Belvoir Elderflower Syrup
- 2 cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ½ cup vegan butter
- ¼ cup cane sugar (or alternatively ¼ cup monk fruit)
- 2 large flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water)
- 1 tsp vanilla extract
- ½ cup non-dairy milk (such as almond, soy, pea or oat milk)
For the Strawberry Buttercream:
- ½ cup vegan butter (softened)
- 2 cups powdered sugar (sifted)
- 3 tbsp Buddy Fruits Organic Strawberry Fruit Spread
- 1 tsp vanilla extract
- Pinch of salt (optional)
DIRECTIONS:
Make the Cake:
- Preheat the oven to 355°F (180°C). Grease and line an 8-inch loaf cake pan.
- Steep chamomile tea in ⅓ cup boiling water for 5 minutes, then strain and let cool.
- In a bowl, whisk together flour, baking powder, baking soda, sugar and salt.
- In a large bowl, beat vegan butter until fluffy. Mix in flax eggs and vanilla.
- Gradually add dry ingredients, alternating with chamomile tea and non-dairy milk. Mix until just combined.
- Pour batter into the pan and smooth the top. Bake for 40-45 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Make the Buttercream:
- Beat vegan butter until smooth. Gradually add powdered sugar, mixing until fluffy.
- Add Buddy Fruits Organic Strawberry Fruit Spread, vanilla, and salt. Mix until smooth. Adjust consistency with non-dairy milk if needed.
Assemble:
- Spread buttercream over the cooled cake.
- Optional: Garnish with fresh strawberries, elderflower syrup, or chamomile flowers.
