Chocolate Chip Strawberry Energy Bites

RECIPE DESCRIPTION:

Chocolate-covered strawberries are delicious, but have you tried them in bite-sized form? Our Chocolate Chip Strawberry Energy Bites combine the rich, indulgent taste of chocolate with the bright, fruity flavor of Buddy Fruits Organic Strawberry Fruit Spread. It’s an easy to make snack that brings together sweetness and real fruit goodness, making every bite satisfying.

Servings: approx. 15-20 balls

INGREDIENTS:

  • 1 cup nut butter of choice (all natural), we used cashew
  • ⅓ cup maple syrup
  • 1 cup old-fashioned oats
  • ¼ cup unsweetened shredded coconut
  • 2 tbsp flax meal
  • ¼ cup vegan semi-sweet chocolate chips
  • ¼ cup Buddy Fruits Organic Strawberry Fruit Spread
  • Optional: Chopped Dried Cranberries

DIRECTIONS:

Mix Wet Ingredients:

  • In a bowl, stir together the nut butter, maple syrup, and Buddy Fruits Organic Strawberry Fruit Spread until combined.

Mix Dry Ingredients:

  • In another bowl, stir together the oats, coconut, flax meal, and chocolate chips until combined. Optional also add chopped dried cranberries.

Combine and Mix:

  • Add the nut butter mixture to the dry ingredients and stir until all the oats are evenly coated. The mixture might be slightly sticky due to the fruit spread.

Form Energy Bites:

  • Use a cookie scooper or tablespoon to portion out the mixture into 20 evenly sized energy bites. It's helpful to work with clean, slightly wet hands to prevent sticking, rewetting as needed.

Chill and Set:

  • Place the energy bites on a lined baking sheet or plate and refrigerate for at least 30 minutes to firm up before serving.

If the mixture feels too wet or sticky, you can add a bit more oats or oat flour, one tablespoon at a time, until the consistency is right for forming balls. Another option is to roll the balls in coconut flakes, flax meal or another topping!

Store the energy bites in an airtight container in the refrigerator for up to a week.
