Fruit-Filled Almond Thumbprint Cookies

RECIPE DESCRIPTION:

The holidays are just around the corner, and we’re celebrating with these delightful Fruit-Filled Almond Thumbprint Cookies! Skip the usual chocolate treats and embrace the sweetness of real fruit with Buddy Fruits Organic Fruit Spreads—perfect for an easy, flavorful twist on a classic favorite.

INGREDIENTS:

  • 2 sticks unsalted butter, room temp
  • 1 cup granulated sugar
  • 1 egg, room temp
  • 1.5 tsp vanilla
  • 3 cups AP flour
  • .5 tsp salt
  • 2 tsp baking powder
  • Red and purple food coloring
  • 2 cups powdered sugar, for rolling
  • Buddy Fruits Organic Strawberry and Concord Grape Fruit Spreads, reduced until jammy

DIRECTIONS:

  1. Add Buddy Fruits to a medium saucepan and reduce until thick and jammy (one flavor at a time).
  2. Cream together the butter and sugar until light and fluffy.
  3. Add egg and vanilla and mix until combined.
  4. In a bowl, whisk together flour, salt and baking powder.
  5. Add dry ingredients to the wet ingredient mixture and mix until just combined and no traces of flour remain.
  6. Split the dough in half, into two separate bowls and add a few drops of red and purple food coloring. 
  7. Make golf ball size balls of dough and roll them between your hands. Then roll each dough ball in powdered sugar. This will give you a crackled top when baked!
  8. Arrange the dough balls on a lined baking sheet, about 2 inches apart. Press your thumb into each cookie, making room for the Buddy Fruits Organic Fruit Spreads.
  9. Fill each divot with the reduced Buddy Fruits Organic Strawberry or Grape Buddy Fruit Spreads.
  10. Bake at 350F for 12-15 min.
  11. Dust with extra powdered sugar, if desired.
