Fruit-Filled Almond Thumbprint Cookies
RECIPE DESCRIPTION:
The holidays are just around the corner, and we’re celebrating with these delightful Fruit-Filled Almond Thumbprint Cookies! Skip the usual chocolate treats and embrace the sweetness of real fruit with Buddy Fruits Organic Fruit Spreads—perfect for an easy, flavorful twist on a classic favorite.
INGREDIENTS:
- 2 sticks unsalted butter, room temp
- 1 cup granulated sugar
- 1 egg, room temp
- 1.5 tsp vanilla
- 3 cups AP flour
- .5 tsp salt
- 2 tsp baking powder
- Red and purple food coloring
- 2 cups powdered sugar, for rolling
- Buddy Fruits Organic Strawberry and Concord Grape Fruit Spreads, reduced until jammy
DIRECTIONS:
- Add Buddy Fruits to a medium saucepan and reduce until thick and jammy (one flavor at a time).
- Cream together the butter and sugar until light and fluffy.
- Add egg and vanilla and mix until combined.
- In a bowl, whisk together flour, salt and baking powder.
- Add dry ingredients to the wet ingredient mixture and mix until just combined and no traces of flour remain.
- Split the dough in half, into two separate bowls and add a few drops of red and purple food coloring.
- Make golf ball size balls of dough and roll them between your hands. Then roll each dough ball in powdered sugar. This will give you a crackled top when baked!
- Arrange the dough balls on a lined baking sheet, about 2 inches apart. Press your thumb into each cookie, making room for the Buddy Fruits Organic Fruit Spreads.
- Fill each divot with the reduced Buddy Fruits Organic Strawberry or Grape Buddy Fruit Spreads.
- Bake at 350F for 12-15 min.
- Dust with extra powdered sugar, if desired.
