Mango Dragon Fruit Chia Pudding

RECIPE DESCRIPTION:

Eye-catching and easy to make, this Mango and Dragon Fruit Chia Pudding is a deliciously wholesome treat! Sweet and slightly tangy mango blends perfectly with the unique flavors of dragon fruit, while chia seeds add a delightful texture. But the real star is Buddy Fruits Organic Mango Fruit Spread, which easily adds real fruit flavor without any of the mess!

INGREDIENTS:

  • Buddy Fruits Organic Mango Fruit Spread
  • 350 ml milk of choice 
  • 1 ½ tbsp maple syrup
  • ½ tsp vanilla
  • 65 g chia seeds (6 tbsp)
  • 1/2 pink dragon fruit blended
  • 1 large mango
  • Vanilla coconut yoghurt

DIRECTIONS:

  1. Combine 350 ml milk of choice, 1 ½ tbsp maple syrup, and ½ tsp vanilla in a measuring jug and mix. Add 65 g chia seeds and stir well with a fork. Leave to set for at least four hours ideally overnight, stirring every couple of hours.
  2. Peel and roughly chop half of the 1/2 pink dragon fruit, add to a jug, and blend.
  3. Mix the pureed dragon fruit with the chia pudding.
  4. Peel and roughly dice the 1 large Alfonso mango add to a bowl or jug, and using a hand blender, blitz until smooth
  5. Layer dragon fruit chia seed pudding, Buddy Fruits Organic Mango Fruit Spread, and Vanilla coconut yoghurt. Top with chopped mango and Buddy Fruits Organic Mango Fruit Spread.. Enjoy!
