Strawberry Peanut Butter Eggs

RECIPE DESCRIPTION:

Perfect for spring celebrations, Easter baskets, or a festive dessert platter, these playful eggs are fun for Buddies of all ages.

INGREDIENTS:

  • 1 cup creamy peanut butter
  • 3 tbsp coconut flour
  • 7 tbsp Buddy Fruits Organic Strawberry Fruit Spread
  • 1 tsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 cup powdered freeze-dried strawberries
  • 1 bar dark chocolate, for coating

DIRECTIONS:

  1. Prepare the Dough
    In a large bowl, mix together the peanut butter, coconut flour, Buddy Fruits Organic Strawberry Fruit Spread, melted coconut oil, vanilla extract, and powdered freeze-dried strawberries until a thick batter forms.
    Tip: If the batter is too soft, add an extra tablespoon of coconut flour. The consistency depends on how thick your peanut butter is—if it's more liquid, you'll need the extra flour.
  2. Shape the Eggs
    Line a baking sheet with parchment paper. Using a cookie scoop, form 12 evenly sized balls. Use your hands to shape them into egg-like ovals.
  3. Freeze
    Place the eggs on the prepared baking sheet and freeze for 20 minutes.
  4. Coat in Chocolate
    While the eggs are chilling, melt the dark chocolate. Once melted, remove the eggs from the freezer and drizzle or dip each one in the chocolate until fully coated.
  5. Finishing Touches
    Place the coated eggs back onto the baking sheet and, if desired, sprinkle with extra powdered freeze-dried strawberries for a pop of color and flavor. Let them sit until the chocolate hardens.
  6. Enjoy & Store
