White Chocolate Strawberry Blondies

RECIPE DESCRIPTION:

Indulge in the perfect blend of sweet and fruity with these White Chocolate Strawberry Blondies. Made with creamy white chocolate and bursts of fresh strawberry flavor, these blondies are a delightful treat that’s easy to bake and impossible to resist. Ideal for any occasion, they’re a crowd-pleaser that combines rich, gooey texture with a refreshing fruity twist!

INGREDIENTS:

Dry Ingredients:

  • 1 ⅔ cups (200 g) all-purpose flour
  • 1 ½ tsp baking powder
  • ⅔ cup vegan white chocolate chips

Wet Ingredients:

  • ½ cup (113 g) vegan butter or coconut oil, melted and cooled
  • 1 cup (200 g) coconut sugar
  • ⅓ cup (67 g) dairy-free yogurt
  • 1 tsp vanilla extract
  • 1 tsp Buddy Fruits Organic Strawberry Fruit Spread
  • ½ cup plant milk (eg almond, oat)

Topping & Glaze:

  • 4–5 tbsp Buddy Fruits Organic Strawberry Fruit Spread
  • ½ cup powdered sugar
  • 2–3 tbsp freeze dried crushed strawberries
  • Optional: chopped pistachio, sea salt

DIRECTIONS:

Preheat Oven:

  • Preheat your oven to 355°F (180°C) and line an 8x8-inch baking pan with parchment paper.

Mix the Batter:

  • In a large bowl, whisk melted vegan butter and sugar until smooth.
  • Stir in the yogurt, vanilla, and 1 tsp buddy fruits strawberry spread.
  • Sift in the flour and baking powder. Mix until crumbly and combined, then add milk and mix until a smooth batter forms. 
  • Then fold in the white chocolate chips.

Assemble and Bake:

  • Pour the batter into the prepared pan, spreading it evenly.
  • Dollop the Buddy Fruits Organic Strawberry Fruit Spread on top in several spots and use a toothpick to swirl it.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean, with just a few moist crumbs. (approx. 205°F inside cake)

Make the Glaze:

  • Mix the icing sugar and 2–3 tablespoons Buddy Fruits Organic Strawberry Fruit Spread in a bowl until smooth. Adjust thickness, by adding more spread or powdered sugar, if needed.t

Glaze and Serve:

  • Once the blondies are cool, drizzle or spread the strawberry glaze on top. Let it set, then slice into squares and enjoy!
